This version is a little bit like the traditional quiche but with a few personal touches. We added potatoes which makes it a complete meal including the carbs. No flours crust in this one.
In case you want to take out the cheese, you can use nutritional yeast, mixed inside and also spreaded on top just like if you are using the cheese. It takes less than 15 minutes to prepare and about 25 minutes in the oven.

Ingredients
Eggs / 10 u
Potatoes / 5 med units
Brocoli / 1 med unit
Palmito cheese or Nutritional yeast / 1 unit of cheese or 8 tbs of nutritional yeast
Himalayan salt / as needed
Black pepper /as needed
Garlic / 1 unit (bulb)
Fresh oregano / ¼ of a small roll
Fresh thyme / ¼ of a small roll
Olive oil / 2 tbs
Directions
Chop the broccoli crops in thin slices, mix with half of salt and black pepper, chopped garlic, thyme, oregano and olive oil. Saute it just for about two minutes.
Beat eggs. Shred raw peeled potatoes. Mix everything with the rest of salt, black pepper, half of shredded cheese or nutritional yeast.
Preheat oven and grease a medium glass pyrex. Set the mixture and add the rest of shredded cheese or nutritional yeast on top. Bake mixture for about 20 minutes, after that time, bake only on broil for gratinar the cheese for about 5 minutes.
