We love coconut rice and mixed with sauteed organic mixed veggies is a delicious, easy and fast meal to prepare. Tropical style with a bit of spices and habanero pepper, now available on our helpca!
Ingredients (Serves 6)
Rice / 2 cups
Coconut milk / 4 cups
Salt / 1 tablespoon
Thyme / 1/2 roll
Habanero pepper / 2 units
Black pepper / 1/2 teaspoon
Mix blend of spices / 1/2 teaspoon
Onions / 1 unit
Turmeric / 1 small root
Ginger / 1 small root
Sweet pepper / 1 unit
Garlic / 6 cloves
Broccoli / 1 small unit
Spinach / 1 roll
Champignon mushrooms / 6 units
Coconut oil / as needed
Directions
In a pot put a bit of coconut oil, add 2 chopped garlic cloves, thyme, and 1 habanero pepper,
when is golden and nice add the rice, coconut milk, and salt. Stir and cook for about 20 mins on medium heat
when it starts to get drier, lower the heat to low temperature, and put a lid on the top. Cook for about 20 mins more.
Chop really fine or shred finely the turmeric and ginger. Cut in small pieces the broccoli. and garlic. Wash and rinse the spinach. Cut in julienne the onions and sweet peppers. Slice the mushrooms.
Preheat a pan, coconut oil as needed, and start adding the garlic, turmeric, ginger, sweet pepper and onion. When this is done set aside.
Repeat the process but this time add to the hot coconut oil the broccoli, mushrooms, and habanero pepper ( without chopping the pepper, is just for flavor) when this is almost done add the spinach and sauté a bit more.
Mix the first veggies with these ones and add the rice, add the blend of spices, and black pepper.
