Learn how to make crepes at home with this easy gluten-free vegan crepe recipe! Crepes can be sweet or savory. Perfect for a special breakfast or dessert. For this one we suggest a Breadfruit flour is high in carbohydrates and a good source of energy, protein, and dietary fiber. Breadfruit flour is also high in vitamins including niacin, thiamine, vitamin A and vitamin C. It doesn't stop there. This superflour is rich in essential micronutrients including antioxidants, calcium, carotenoids, copper, iron, magnesium, and potassium.
Ingredients Makes 10 crepes
⅔ cups Breadfruit flour
⅓ cup white sorghum flour
2 tbsp chickpea or lentils flour
1 tsp xanthan gum
1 tsp nutritional yeast
1 tsp chia seeds
1 tbsp coconut oil
2 cups water
¼ tsp sea salt
Instructions
Mix the dry ingredients (white sorghum flour could be substitute for cassava or rice flour)
Add water and whisk thoroughly until having an homogeneous batter
Let rest for 3 minutes, for the chia seeds to hydrate. The result consistency must be a thick but flexible batter
Heat a non-stick skillet on medium heat and grease with some coconut oil
Add a scoop of batter and with the help of the back of a spoon, extend the batter till covering the pan’s surface
Let cook evenly, until the edges start to rise from the pan and the crepe is moving easily from the pan’s surface. Flip the crepe and finish cooking for 1 to 2 minutes more
Serve either with fruits and maple syrup or any savory filling
