This week I am happy to share the best banana bread that we have ever tried and make in our kitchen. Its an original recipe from my sweet friend and neighbor Pam, and we added some tropical flavor with the ginger, coconut sugar and cacao vibes. We also have a gluten free option with bread fruit flour, there is not more tropical than that!

Ingredients (Makes 2 medium loaves)
Bananas / 5 cups
Butter / 1 cup /
Coconut sugar / 1/2 cups
Bread fruit Flour or Yuca Flour for a gluten free option / 4 cups
Ginger / 1teaspoon
Cacao / 1/2 bar
Eggs / 4 units
Cinnamon powder / 1/2 teaspoon
Salt / 1/2 teaspoon
Baking soda /2 teaspoon
Vanilla extract / 2 teaspoon
Directions
Cut the cacao bar into small pieces and set aside.
Grind the fresh ginger and mix it with the eggs, butter, coconut sugar, vanilla extract and mashed bananas.
Mix in another bowl the flour, cinnamon powder, salt and baking powder.
Blend together both, dry and liquid mixes. Just enough, do not over mix.
At the very end mix very gently the cacao pieces doing circular movements incorporating them with the spatula.
Preheat the oven and bake into two non stick pans for about one hour on 350 grades.
Let cool 10 minutes before removing from pan.
