Ingredients (Serves about 12 units)
Fresh tuna / ½ kilo ( is local and fresh)
Onions / 5 med units
Lettuce / 1 med unit
Pineapple / 1 medium unit
Uchuvas / 1 box
Avocado / 2 units
Himalayan salt / as needed
Black pepper /as needed
Lemon / 2 units
Fresh oregano / ¼ of a small roll
Fresh thyme / ¼ of a small roll
Olive oil / 2 tbs
Vegan Mayo / 1 jar
Corn Tortillas / 3 packages
Coconut oil / as needed
Instructions
Chop the tuna in squares. Season with salt, pepper, oregano and thyme.
Peel the pineapple take off the cord and slice it. Grill the slices one by one on a preheated pan with a bit of coconut oil. Cut it in squares when cooled off.
Prepare the salad by mixing all ingredients: Lettuce, onion julienes, uchuvas and avocado squares. Add salt, pepper, lemon juice and olive oil. Put aside the veganaise to add on top of each taco.
Add coconut oil in a preheated pan and grill the tuna squares for a minute or so. Serve immediately.
Order to serve: tortilla, hot tuna , salad, pineapple, dressing.
